How many steakhouses are there in Vegas? That’s like wondering about how many visitors land every hour at Harry Reed Airport. So how does a steakhouse stand out in this town? Consider the elegantly appointed Scotch 80 Prime inside the Palms, with Chef Marty Lopez at the helm. The restaurant is currently stealing attention with the “official launch of our new summer dining experience.”
At a packed private dinner showcasing the innovative menu for media folks and ring light-toting influencers, I was instantly lit up by the “Shrimp Toast.” It’s a magical, kind of surreal creation merging Hokkaido milk bread, shrimp mousse, ikura, and chili jam aoli. Best-salad-ever honors go to the “Tomato Burrata” salad, a seductive Asian Italian hybrid with Momotaro tomatoes, ninja radish, and Parmigiano Reggiano. Specialty ingredients reign supreme at Scotch 80.

Steakhouses are never cheap of course but this one has an appealing work-around for budget-minded diners. Try their “Social Hour,” Monday-Thursday between 5-7pm. That’s when select raw bar items, appetizers including the “Shrimp Toast,” salads, and main plates—like the heavenly filet mignon that was served at the private dinner—are notably 30% off (the same goes for cocktails, beer, and wine). All the prime-cut steaks are grilled over mesquite charcoal with fruit woods—and finished (thank you) with garlic herb butter. I’m ready to move in here.
